Mini Meatloaf

An easy to make Mini Meatloaf Recipe

Meat Loaf has taken on a whole new look and attitude!

These small cheesy meat loaves aren't what grandma used to serve, but if she would have known about preparing them this way, I bet she would have!

These mini loaves are simple, delicious and fun. Not to mention, the cook time (also known as your husband/boyfriend/kid's waiting period during his/her massive hunger rant) is cut in half!

Baked Beans

Several great American classic dishes have danced in our minds this week in anticipation of getting together with loved ones. There's nothing like a great spread of comfort food favorites to bring home the essence of a long, American holiday weekend. We plan on celebrating President's Day Weekend with a few meals that make it quite nice to be an American!

My husband loves this dish! I better double it, so everyone else gets some! :)

Zucchini Ribbons

Here is a simple and sensational side dish. It's delicious with your choice of entree: fish, beef or chicken! It's super versatile since it has the light fresh ribbons, creaminess in the parmesan and little bite with the red pepper.

Chicken & Spaghetti Squash Casserole

There are a bazillion casserole dishes out there, but this one is different! I promise!

My most picky clients, those who for some reason shun casseroles, give this one two thumbs up and often make quick requests to have it again. "What makes it different?" you ask. Well, for starters, although it does have a can of cream of mushroom soup, you would never know it. It's not a real creamy, saucy casserole. The focus is on the beautiful tri-color peppers, spaghetti squash strings and plump organic chicken bites.

Another reason I love this one is because it was inspired by my mom (Beverly). I have her recipe note card in her handwriting and all. It's one of my most treasured things. And though mom had great intentions and her "Ham and Swiss Noodle Casserole" was delish, I think she'd also love my much healthier version!
